Recipe: Pan Roasted Shrimp with Wisconsin Aged Parmesan



One of the first signature dishes at Chef Michael Symon's restaurant, Lola, this meal can be enjoyed as an entrée or as a salad. Featuring buttery Wisconsin Aged Parmesan that crackles on the tongue, shrimp, white beans, and grape tomatoes, this original dish boasts rich and creamy flavors with a full-bodied taste.

NUMBER OF SERVINGS: 4-6
  • 2 shallots, minced (about 2 tablespoons)
  • 1 clove garlic, minced
  • Kosher salt and ground black pepper
  • Juice of 2 lemons
  • 1/2 cup (4 ounces) extra virgin olive oil plus 1 tablespoon for shrimp
  • 1/2 cup grape tomatoes, halved
  • 1 cup freshly cooked or canned white beans, such as cannellini
  • 1 cup (about 4 ounces) Wisconsin Parmesan cheese, cut in small dice
  • 1/4 cup fresh dill, chopped
  • 1 pound large shrimp, peeled and deveined

Place shallots and garlic in mixing bowl. Add pinch of salt; mix. Add lemon juice, stir and slowly whisk in olive oil. Add tomatoes, beans, Parmesan cheese and dill. Mix well and set aside.

Pan-roast shrimp: Heat remaining 1 tablespoon olive oil in sauté pan. Add shrimp and cook, turning until pink and cooked through, about 3 minutes. Do not overcook. Season to taste with salt and coarsely ground black pepper.

Add warm shrimp to prepared mixture and toss. Serve immediately.

Recipe: Coppa, Ricotta, and Arugula Pizza



Coppa, sometimes called capicola, is a dry-cured meat made with pork neck or shoulder and eaten very thinly sliced. You can switch out the coppa for your favorite type of cured meat. Pizza night...yum!

Total Time: 10 minutes
Yield: Serves 6

Ingredients

* 15 ounces ricotta cheese (about 2 cups)
* Our Best Pizza Dough
* About 5 oz. (18 slices) coppa
* About 2 tbsp. extra-virgin olive oil
* Squeeze of fresh lemon juice
* Salt
* Freshly ground black pepper
* About 5 cups (2 1/2 oz.) baby arugula

Preparation

1. Evenly spread 2 heaping spoonfuls (1/3 cup) ricotta cheese onto each half-grilled dough round, then top with several slices of coppa. Grill as directed in step 6.

2. In a bowl, combine oil, lemon juice, and a pinch each of salt and pepper; toss with arugula. About 1 minute before pizzas are done, evenly scatter a generous amount of dressed arugula onto pizzas and finish grilling, covered, for about 1 minute.

Recipe: Spinach Mushroom Pasta


Yield
Serves 4

Ingredients
8 ounces whole-wheat pasta
2 tablespoons olive oil
1 garlic clove, minced
1 pound sliced mushrooms
6 ounces cream cheese
1/2 cup milk
8 cups lightly packed spinach
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh chives
1/2 cup grated Parmesan cheese

Preparation
1. Boil 2 qts. water in a large pot and cook pasta according to package directions. Drain and transfer to a large serving bowl.

2. Heat olive oil in a large frying pan, add garlic and mushrooms, and cook until softened, about 5 minutes. Add cream cheese and milk and heat until boiling, stirring often. Add spinach and cook until wilted, about 3 minutes. Season to taste with salt and pepper, then pour over pasta. Sprinkle with chives and serve with Parmesan on the side.

Recipe: Grilled bread with zucchini, ricotta and basil


4 1/2-inch-thick slices country bread
2 tablespoons olive oil
4 small zucchini (about 2 pounds), thinly sliced lengthwise
1 cup fresh basil, leaves torn
1/4 teaspoon crushed red pepper
kosher salt
1 cup fresh ricotta
Directions

Heat grill to medium-high. Brush the bread with 1 tablespoon of the oil and grill until golden and crisp, about 1 minute per side. Transfer to plates.

Grill the zucchini until tender and slightly charred, 3 to 4 minutes per side. Toss in a large bowl with the basil, red pepper, 1/2 teaspoon salt, and the remaining tablespoon of oil.

Top the bread with the zucchini and ricotta.

Recipe: Parmesan Risotto

Risotto...I do so love creamy, dreamy, cheesy risotto. It has a reputation for being difficult to make but I found a step by step recipe that I am going to try soon. Maybe you will like it, too.





Parmesan Risotto

SERVES: 8
TIME: 50 minutes


You Will Need:

10-12 cups reduced-sodium or homemade chicken broth
2 tbsp. olive oil
2 tbsp. plus 1 tsp. butter, divided
1 medium onion, chopped (about 1 1/2 cups)
2 1/2 cups risotto rice
3/4 cup dry white wine
1/2 tsp. salt
1/2 cup freshly grated Parmesan cheese, plus more for serving
1/2 tsp. freshly grated black pepper
1/4 cup chopped flat leaf parsley

1. Bring chicken broth to a simmer in a medium pot. Keep at a simmer, covered, over low heat.

2. Heat the olive oil and 2 tbsp. butter over medium heat in a heavy-bottomed 8-qt. pot. Add onion and saute, stirring occasionally, until translucent and beginning to turn golden, about 10 minutes. Add rice and saute, stirring constantly, until just the edges of the grains look translucent, about 3 minutes.

3. Add wine and 1/2 tsp. salt and cook, stirring, until wine is completely absorbed by rice. Add about 1/2 cup hot broth to rice and cook, stirring constantly, until broth is completely absorbed by rice; reduce heat to medium-low if mixture starts to boil. Continue adding broth 1/2 cup at a time, stirring until each addition is absorbed before adding the next, until rice is just tender to the bite (15-30 minutes; you will have broth left over). Keep rice at a constant simmer.

4. Remove rice from heat and stir in Parmesan, pepper, parsley, remaining 1 tsp. butter, and salt to taste. For a looser risotto, stir in 1-2 cups of the remaining broth. Serve immediately, with more Parmesan on the side for sprinkling on the top.
