Recipe: Raspberry and key lime margarita



Makes 4 cocktails

1 pint fresh raspberries (or about 1 cup frozen)

1/2 cup lemon juice

1/3 cup Key lime juice (or 1/2 cup regular lime juice)

1 cup tequila (less if you please)

Combine the raspberries and citrus juices in a blender. Pulse until smooth. Use a fine mesh strainer and a spatula to press the raspberry mixture through into a bowl- this removes the seeds from the berries.

Add the tequila, pour into a pitcher and pour into a salt-rimmed glass with ice. Garnish with half a Key lime or a slice of regular lime.

Recipe: Spiked Pineapple Agua Fresca


An agua fresca is as simple as fresh fruit blended with sugar, water, and a squeeze of citrus.  This refreshing drink is served everywhere from street carts to restaurants throughout Mexico. By replacing the water with rum, you can create a cocktail that throws you into vacation mode with just one sip!

You Will Need:
3 pounds pineapple, peeled, cored, and cut into large chunks
2 cups white rum
6 tablespoons granulated sugar
3 tablespoons plus 2 teaspoons lime juice (about 2 medium limes)

How To:
Combine all ingredients in a blender and process until smooth (it's easiest to do this in batches).  Transfer agua fresca to a large pitcher or punch bowl.  Chill until ready to drink. Serve over ice.

Recipe: Ruby Red Grapefruit Margarita

Just finished up my term paper for Art History 206. One of these seems like it'd be pretty darn good right about now. Enjoy!



Ruby Red Grapefruit Margarita

Ingredients

1 wedge Ruby Red grapefruit
Coarse kosher salt
6 ounces tequila
1/3 cup Ruby Red vodka
1/4 cup simple syrup
1 cup Ruby Red grapefruit juice, freshly squeezed or from a carton
1/4 freshly squeezed lime juice
4 cups ice cubes
2 crosswise slices Ruby Red grapefruit, cut into quarters

Directions

Use the wedge of grapefruit to rub the rims of 6 margarita glasses with grapefruit juice. Dip the rims in the kosher salt to coat. Set aside as you prepare the margaritas.

Place the tequila, vodka, simple syrup, grapefruit juice, lime juice and ice in a bar blender and puree until smooth. Divide the margarita between 6 glasses and garnish with the grapefruit quarters.
